The image of burning spam is a bit violent, but I must confess that it has come to my mind already. SpamBurner promises to be the right tool for this activity.
Indeed, the text filters it comes with detect a lot of spam automatically, ready for automatic deletion (with a safety net). Generally easy to use in spite of its nonstandard user interface, SpamBurner makes it a snap to add new text filters and email addresses to the respective black and white lists.
SpamBurner uses effective text filtering by calculating a spam score for each message from its contents and headers. Unfortunately, SpamBurner only supports POP accounts, but it can filter any Eudora or Outlook folder offline.
