Outlook-QuoteFix makes Outlook quote the original message correctly in plain text replies. Unfortunately, Outlook-QuoteFix doesn't allow you to reformat and rewrap text selectively, though.

One of the biggest problems with Outlook is that it fools you into a silly style of replying. It doesn't quote correctly and makes you write your reply above the quoted message.

Outlook-QuoteFix corrects most of these shortcomings for plain text messages. It inserts the original message intelligently, moves signatures to the bottom, strips them from quoted text and lets you customize the (obscenely long) reply header. In short, Outlook-QuoteFix will make you write better replies without effort.

It's just a pity that Outlook-QuoteFix doesn't include functionality to rewrap quoted text selectively (after you had to break a line to insert your reply, for example). Eye candy like color-coding indented text and signatures might be nice, too.
