Flatten veal cutlets, lay a leaf of sage on each and top with a slice of prosciutto. Roll up and fix with a toothpick. Sauté in a bit of olive oil and butter. Add some white wine when almost done.This is, in principle, how Saltimbocce alla Romana are made, one of the surprisingly few dishes that include the characteristically strong taste of sage as a prominent ingredient. Of course, the Italians also make pesto from sage, olive oil or butter (!), Parmigiano-Reggiano cheese, lemon zest and garlic. I'll have to try that some day. What I have already tried, tasted and tested is Sage, the RSS feed reader extension for Mozilla Firefox:
