Marie Harel made cheese like she always had at her farm in Camembert. Something was different this year, though, a year after the revolution had begun: a recalcitrant Catholic priest hid in the barn. Unwilling to swear allegiance to the French Republic, the abbé from the Brie region had sought shelter at Harel's Beaumoncel.
To thank her, Charles-Jean Bonvoust told Marie Harel a secret ingredient for her cheese recipe. With that addition, Marie Harel's cheese from Camembert became the Camembert.
